Avoiding spam
The best way to keep from getting spam is by not giving your email address out.  Of course your customers need your email address but they typically are not the ones spamming you.

Spammers often use computers to automatically scan websites for email address.  If it's your own website, make sure your website developer encrypts your email address to keep computers from finding it.  If you must use an email address on an Internet website, use an email address other than the main one you use everyday.  Use an email address that you don't need and never check.  That way the spammers just send email to an email address you don't even care about.

Get off the joke list.  When someone sends an email to 100 of their closest friends, and CC's you, everyone who receives the message, receives your email address.  If one of those friends has a virus on their computer, the virus may send all of those email addresses to a spammer.  When sending emails to several people, do them a favor and BC (Blind Copy) them instead carbon copy.  No one sees the email address of the other recipients.  The drawback to blind copy is "reply to all" won't reply to anyone that was blind copied.

Munge your email address.  A munged email address is one that has been changed so email address harvesters have a hard time finding it but humans can still under stand.  An example is mynameTAKETHISPARTOUT@mycompanyNOSPAM.com.

If you are already getting spam, you can't do much to keep it from being sent.  If practical, change your email address.  If that's not practical because there are people who can't be easily notified of your new address, there are several good spam filtering solutions that will help.
